CLIENT: JÖRO Restaurant 

PROJECT LOCATION: Sheffield| Yorkshire

Jöro Restaurant in Sheffield focuses on a unique Japanese-inspired culinary experience. Driven by flavour, Jöro offers signature tasting menus and an express lunch menu in an informal, open-plan dining room. The restaurant is designed to immerse guests in the dining experience, allowing them to share in the energy of the kitchen and witness the culinary artistry firsthand.

THE BRIEF

Vision Commercial Kitchens was tasked with designing and installing a high-end kitchen that perfectly supported Jöro’s ambitious culinary vision. This involved:

  • Utilising Electrolux’s Thermaline range to ensure culinary excellence and durability.

  • Creating an open kitchen design that showcased the chefs at work

  • Designing a kitchen that was both visually appealing and highly efficient in its operation, while seamlessly integrating with the restaurant's aesthetic.

DESIGN

Jöro's kitchen design centred around the use of Electrolux’s high-end Thermaline range, known for its heavy-duty, modular construction and widespread use in Michelin-starred kitchens globally. This premium equipment provided the foundation for culinary excellence within the Jöro kitchen.

The client's vision of an open kitchen was a key driver of the design. The kitchen was designed to be open plan, allowing diners to observe the chefs at work and experience the energy  of the culinary process. To facilitate this, a series of specially designed islands were positioned in front of the cookline. These islands served as dedicated areas for finishing dishes and conducting light cooking, allowing diners to witness the final stages of culinary creation.

Behind the main cooking area, a dedicated prep kitchen was established. This area served as the primary zone for food preparation before dishes were passed to the front of house for final plating and service.

OUR WORK

The project presented some interesting logistical considerations. While the initial construction plans in Sheffield city centre were ultimately delayed, this provided an opportunity to further refine the design and ensure it was perfectly tailored to Jöro's needs. The eventual relocation to Oughtibridge allowed for a fresh perspective and the creation of an even more ideal kitchen layout. Similarly, the unforeseen structural issues at the new site, particularly, limitations with drainage, presented a chance for innovative problem-solving. The integration of waste pumps, while requiring careful planning, ultimately enhanced the kitchen's efficiency and functionality.

Vision Commercial Kitchens overcame these challenges through proactive design and planning. Extensive consultation with Chef Luke French and the Jöro team throughout the design phase ensured the kitchen layout and equipment selection aligned with their culinary vision and operational needs. Strong project management, with clear and consistent communication maintained with the client, contractors, and internal teams, ensured the project remained on track despite the unforeseen challenges.
